tiny onions is tedious, so I tried using the leaves and bulbs. Thing
is, the leave bearing the babies is as woody as bamboo, making it
more suited to fishing poles than an ingredient in dinner.
I have, however, found that taking the little bulbs off the onion
plant causes it to enlarge the main bulb. So, now that my
Egyptian onions are working quite well as food, not just as a point
of visual interest, I wondered about their quercetin content since a
main reason I cook with onion is that yellow onion's high
quercetin content is supposed to help fight skin cancer. (When I
was younger my boyfriend had a sports car and I got badly
sunburned -- now I'm fighting the consequent risks.) Check out

My one question is: how can cooked onions have more quercetin
than raw onions? Is it because more onion fits into the same size
container?
